Traditional Pad Thai Stir Fry
Ingredients:
Sauce:
- 1/3 cup chicken or vegetable stock
- 1 tbs soy sauce
- 1 tbs fish sauce
- 3 tbs brown sugar
- 3 tbs peanut butter
- 1 tbs freshly squeezed lime juice
- 1 tbs rice wine vinegar
- 1 tsp Sriracha
- 1 tsp minced or grated fresh ginger
- 1 tsp minced garlic
Pad Thai:
- 1 pack Nona Lim Pad Thai Noodles
- 1 tsp olive oil
- 1 large egg, beaten
- 1 chicken breast, cubed
- 1/2 pound shrimp, peeled, deveined and cut in half
- 1/2 cup bean sprouts
Garnish:
- Chopped cilantro
- Chopped peanuts
- Lime wedges
- Sriracha
Instructions:
- Whisk together the sauce ingredients and set aside.
- Heat oil. Add chicken breast, egg, and shrimp
- Add the noodles to the skillet and then pour the sauce over the noodles. Reduce heat to medium-low. Cook for another 3-5 minutes, stirring frequently
- Stir in the bean sprouts
- Top with desired toppings and adjust spice level with Sriracha.
