Spicy Flat Noodle Kimchi Stir Fry
The best part about stir fry is that you can have a delicious, filling meal ready in no time at all. With the right condiments – like New Primal’s Coconut Wasabi Aminos – and toppings – like Sinto Gourmet’s vegan kimchi – you can whip up any noodle dish without breaking a sweat. In this Spicy Flat Noodle Kimchi Stir fry, we use our broad, flat Pad See Ew noodles, which have the perfect bite and texture for any stir fry dish.

Ingredients

1 tbsp vegetable oil

½ onion, sliced

2 garlic cloves, minced

1 cup Sinto Gourmet vegan kimchi, chopped
- 1 box Nona Lim Pad See Ew Noodles
Sauce
-
2 tsp gochujang
-
2 tsp rice vinegar
-
1 tbsp cane sugar
-
1 tsp gochugaru (optional, for extra head)
Optional Add-ins and Garnishes

1 soft boiled egg (optional)

2 green onions, sliced lengthwise for garnish (optional)

Roasted sesame seeds for garnish (optional)
*Equipment: A large nonstick skillet, wok or cast iron skillet required for this recipe
Instructions

Cut a small vent in Nona Lim noodle pouches and microwave until they are warm and noodles separated (60 sec). Leave noodles in pouch and set aside.

Heat skillet to medium-high and add vegetable oil. When oil is shimmering, add sliced onion, garlic and kimchi. Sautee for about 5 minutes, until kimchi begins to carmelize.

Combine sauce ingredients well while kimchi is cooking and add half the amount to the vegetables. Toss and sautee for one minute and set contents of skillet in a bowl.

Return skillet to heat, and add some vegetable oil if pan looks dry. Add Nona Lim’s Pad See Ew noodles, separating the noodles as you add them to the skillet. Add the remaining sauce to the skillet and stir fry until noodles carmelize, about 1 minute.

Add kimchi mixture back into the skillet, turn heat to high and toss with noodles for 30 seconds. Plate in two bowls with soft boiled egg, green onions and roasted sesame seeds. Enjoy.
